Just Chimichurri

Recipes 

                  Chimi a Little History!

Chimichurri originated in Argentina and great  with grilled meats in many Latin American countries. 

                  According to Wikipedia

    The name comes from Jimmy McCurry an  Irishman who is said to have made the sauce first.  He was marching for with the troops of Jasson Ospina in the 19th century and sympathetic to the Argentine independence.  The sauce was popular and the recipe was passed on.  However Jimmy McCurry was difficult for the native people to pronounce.  Some say Jimmy's sauce was currupted to "chimichrri", while others say it was named in his honor. 

Other stories include Jimmy Curry an English meat importer, a Scot, James Hurry traveling with gauchos, and an English family in Patagonia over heard by a group of Argentinians with them while saying "give me the curry".  All stories share an English speaking colonist and the corruption of names or words by the local population.   

 Steak with Carters Select Chimichurri

Place steak of your choice (ribeye, sirloin, or New York strip on hot grill, baste with chimichurri sauce. Grill until the inside reaches the desired temperture.  Remove from grill. Beginning from the outer portion of the steak and slice in long strips.  Pick up steak and place on baguette and enjoy.  You can return the remainder of the steak to the grill and baste until more steak is cooked.  Also great on grilled chicken or fish.   

                       Beef  Pot Roast

        Flour and  shake to remove excess .

                    Brown roast in skillet.

            Place roast in slow  cooker and

                add 4 oz.  of Chimichurri.

                   Cook until fork tender.

         

                         Potato Salad

                          1 lb. potatoes

              3 Tbs. Carters Select Chimichurri

                            1 Tsp. Salt

      Add 1 Tsp. salt to water and boil potatoes

                 with skins until fork tender. 

                 Drain and cut into chunks. 

            While potatoes are still hot add 

                             chimichurri. 

                       Serve hot or cold.   

                           Cole Slaw

             4 cups of shreaded cabbage

         Purple or Green or combination

         Add enought Chimichurri to coat.

        Salt to taste and allow to marinate

                      for half and hour.

          Try adding a dash of sesame oil

                      before serving.     

       Mashed Potatoes

      Fold in 2 Tbs. Carters

Chimichurri  to 1 lb.   cooked

potatoes once they are mashed.

 

      Try these uses for Carter

          Select Chimichurri

     Marinate shrimp, chicken,

           beef, pork, or fish

     for half an hour and grill.

          Marinate Portabella   

        (or other mushrooms), 

        vegetables and grill.

 

  Pour as a sauce on any meat, 

        pasta, or vegetable.

                     a

    great topping for a hot dog.

 Blend with sour cream and use

         as a salad dressing.

   Blend with cream cheese for

      a zesty sandwich spread. 

 

  Spread chimi on a crusty slice
