| 2 1/2 to 3 cups chicken broth |
Instructions:Brown the pork lightly in olive oil in large pot over medium heat. Add the onion and garlic and saute for 3 minutes. Add flour and cook for a couple of minutes. stirring while it continues to cook. Add Hatch Autumn Roast, a pinch of salt and sugar and mix well. Stir in the potatoes.Pour in broth.Reduce the heat, cover, and simmer for 1 to 2 hours or until pork is tender. Adjust seasoning and serve with warm tortillas. Serves 6 - 8 |
